{Recipe} Vegan Salted Caramel Peanut Butter Truffles

Did I mention they're better for you too?
And they taste amazing!  And there are only 5 ingredients!
These blew our friends and family away, both vegans and non-vegans, who had no idea that something so decadent tasting was actually healthy!
 The secret ingredient is DATES!
I used this recipe and here it is.
Ingredients:
(Makes about 20 truffles)
1 pound of Medjool dates, pitted (I couldn't find these the first time I made them and my dates were fine)
1/2 tsp sea salt and more for topping
1/4 cup creamy natural smooth peanut butter
1 cup of chocolate chips of your choice (I used semi sweet)
1 TBS melted coconut oil
 1) Mix dates(soak them first if not super soft)  in a food processor until they form a ball.  
2) Add a little warm water (1 tsp at a time) if not coming together.  Add 1/2 tsp of sea salt.
3)Using a tiny scoop or spoon, form into balls and place on parchment lined baking sheet. Freeze for 20-30 minutes to set.
4) Remove from freezer and drizzle peanut butter onto each one (if not drizzly, combine with some coconut oil and warm in microwave).
5) Freeze for another 15 minutes or so until the peanut butter is set.
6) Warm the chocolate with 1 TBS coconut oil in microwave or over double boiler.
7) Remove truffles from freezer and dip each one in the chocolate with a fork, shaking off any excess chocolate (is there such a thing?) then place back on parchment lined baking sheet.
8) Top with some sea salt (optional) and put them back in the freezer for about 30 minutes.
9) Set out from the freezer or fridge to serve.  They soften up really quickly at room temperature.
10) Store in the freezer.
