{Recipe} Quinoa Tacos

Tacos are a weeknight staple around here.  
These quick and easy Quinoa Tacos have become an instant favorite.
I cheated a little and used prepared guacamole to make it even easier.
Ingredients:
1 head of Romaine lettuce
1/2 cup dry quinoa  + 1 tsp chili powder(I used 1/2 tsp)
Guacamole
Additional {optional}chopped toppings: tomatoes, tortilla chips, slices of lime, hot sauce, salsa, cheese
Wash and dry Romaine lettuce leaves.
Rinse quinoa and cook with chili powder according to package directions. I used red quinoa, isn't it pretty?
The quinoa takes about 15 minutes to cook and you know it's done when the kernels look like they've popped open.
Serve family style.  Lay out the lettuce leaves and add the cooked quinoa, topping with guacamole.
Add any additional toppings you like and enjoy!

I've never cooked with Quinoa, but this looks delicious, Heather!
It must be healthier than meat.
