{Recipe}Skinnytaste Baked Spaghetti Squash & Cheese

When I saw this recipe and read its description, I knew I had to try it.
I immediately pinned it and got the ingredients.  You can find the original recipe here.
I was making it for Miss Middle Schooler and myself so I made a few adjustments and halved it.
Speaking of halving things....
Here's my version:
Cut a spaghetti squash in half lengthwise, remove seed and bake at 375F oven until tender, about 1 hour.

Here you can see I already messed up.  Spoiler alert: It still worked!
When it's done baking, it will look like this...then the magic happens.


 Separate the strands with a fork and put into a medium bowl. Discard the shells.  Keep the oven on.
Heat 1/2 TBS each of butter and olive oil in pan over medium heat. Add 1/4 cup of chopped onions and cook about 2 minutes.  Stir in 1/8 cup of flour. Cook on low, whisking for 3-4 minutes.
Add 1 cup of milk and 1/2 cup of chicken (or in my case, veggie) broth.
 I use this stuff and water to make the broth.
 Turn heat up to medium high and whisk/cook for 2-3 minutes until it boils and thickens.
Season with salt and pepper.
 I used Cabot Sharp Extra Light Cheddar for this recipe.
Have you ever been to Cabot in Vermont? Fun place and all the cheese samples you can eat!
 It's a good idea to grate your cheese up while the squash is cooking. 
Remove pan from heat when the sauce is smooth and thick.  Add 4 ounces of grated reduced fat cheddar and stir, adjust salt and pepper to taste.
Add the cooked spaghetti squash and 2 cups of raw baby spinach.
 Pour into a baking dish and sprinkle with 2 TBS of grated parmesan cheese.
 Bake until bubbly for 25-30 minutes.
 This makes about  3 1/2 cups. Each one cup serving has 5 Points Plus.
 Cheesy, comforting...
yummy and guilt free!

Scavenger Hunt Sunday 1.27.13

Late again for Ashley's party...
Lace
I  thought I was going to have trouble finding lace, I was wrong. I had more than I could use so I'm using two of my favorites.
(1)
We got this lacy frame with a picture from our wedding as a wedding gift from some friends. I've never changed it.  The wedding pic is in black and white and I always thought it suited the frame. 
I liked the shot better in black and white to give the frames and photos a more cohesive look.
(2)
One of my shirts. I love the lace and buttons agains the grey fabric.
Bling
This was another lace option but since I already had too many, I'm using it for the cute pearly bling on Miss Middle School's Christening shoes.
Fuzzy
 A pair of my cozy slipper socks that I got for Christmas.
Wood
Remember this tree?

 Fabric
This is a painting of fabric that College Girl did last year. It's one of my favorites. It's not hanging up yet so I just propped it on our green couch against a green wall so if it looks a little wonky, it's my fault.

Chevron Under Foot (and overhead)

Hello gorgeous (no, not my feet).
I included this photo in my last Insta-Love post
 
It was a lil' sneak peek of the new kitchen rug.
It had been beckoning from the cover of Ballard Designs.
I must be on a grey and white chevron kick (check out my blog header).
 I needed an after Christmas pick me up and I've been wanting to add more grey to our kitchen since we painted it last year.
The previous rug was also from Ballard.  This is our fourth indoor/outdoor rug that we've purchased from them and they're great!  
{got a little Tony the Tiger on ya}
They are economical in price and if they get too dirty, they can be hosed off.
I didn't take any good 'before' shots so these will have to do from when we updated our kitchen island with bead board and paint.
I finally relented and ordered this baby.  
I could not wait to get it under the table.
Love, love, love how it lightens and brightens up the room.
The old rug found a new home down in hubby's office=win/win.

Insta-Love #2

It's been over two weeks since my last Insta-Love post..where does the time go?

{Pinned} Cleaning a Stainless Steel Sink

I originally pinned a cleaning method here but I used a slightly different method for cleaning my own sink which I did not pin. {smacks head}

Let me show you how grody the sink was.
Nasty nasty!
This is embarrassing!
So moving on..let's get this baby clean!
Sprinkle baking soda over entire sink and spray with white vinegar. Scrub clean with sponge.
I also took out the rack and scrubbed it on both sides.

Rinse everything with a pot of boiling water and wipe dry.


Apply Goo Gone (optional) for any gooey residue, wiping clean.


Use a soft cloth to apply olive oil to the sink and buff dry.
Bask in the reflection of your clean, shiny sink.
So much better!
I really have to remember to do this more often.

I've had my Longaberger laundry basket for a long time and I still love it!

Since we have a leak in our faucet hose everything from under the sink is parked on the kitchen table.

Automatic dishwasher (at least this is still working while the sink is out of commission).
People Watching
I was people watching during the inauguration.
 Recycle
We recycle a lot of sticks and branches from our woods into heat for the fireplace.
